Spices had been added to various kinds of food to impart flavour as well as to improve storage stableness. Many herbs and spices have been proven to impart antioxidant effects in food; the active guidelines are phenolics (Shahidi ou al., 1992; Scwarz ou al., 2001; Tanabe et al., 2002). A wide variety of phenolic substances derived from herbs and spices own potent antioxidant, anti-inflammatory, antimutagenic, anticarcinogenic and anti-tumour activities, which bring about their chemopreventive potential (Surh, 2002). Seasonings are known for their particular antimicrobial and antioxidative homes. Due to an increasing demand for normal food ingredients.
